This is a recipe that I found a while back and have modified slightly to make it mine. I've already made them several times this year. Fall is my favorite time of year, and pumpkin flavored things are one of my favorite things about the fall.
1 pkg cream cheese
1 egg
1 teaspoon vanilla
3 tablespoons brown sugar
2 1/2 cups all-purpose flour
2 cups sugar
2 teaspoons baking powder
2 teaspoons ground cinnamon
1/2 teaspoon salt
2 eggs
1 1/3 cups canned pumpkin
1/4 cup olive oil
2 teaspoons vanilla
Preheat oven to 375
Filling: Beat cream cheese. Add egg, vanilla, and brown sugar. Set aside
Batter: Sift together flour, sugar, baking powder, cinnamon, and salt. Make a well in center of flour mixture and add eggs, pumpkin, olive oil, and vanilla. Beat until smooth.
Place batter in cups about 1/2 full. Add one tablespoon of cream cheese filling in middle of batter. Bake 20-25 minutes.
